Kimchi is a very common side dish in Korean culture. In fact, it is served at nearly every meal. There are many varieties of Kimchi, but commonly it consists of fermented cabbage, radishes, or turnips in a sweet or spicy (or both) brine. Kimchi is thought to ward off illness, and is so pervasive in Korea that when someone gets ready to take a picture they tell the persons to "say kimchi"...similar to our "say cheese".
